The Recipe Video That Started it All, Banana Bread

This is one of my favourites to make as much as it is to eat. Sometimes I like to use flavoured yogurt, chocolate chips or even swirl some Nutella in there. Plain is still my favourite though. This was the first video I did on YouTube you can check it out below.

Here is the Fresh Banana Bread Recipe it makes one loaf.

Ingredients

  • 1 2/3 cups of flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 cup vegetable oil
  • 3 tbsp greek yogurt (or regular)
  • 3 mashed bananas

Directions

  1. Heat oven to 350 degrees, grease and flour one loaf pan.
  2. In a medium mixing bowl whisk together flour, cinnamon, baking soda and salt then set aside.
  3. In another bowl whisk together eggs and sugar well. It will be thick and light in colour. You can use a stand mixer, hand beater or whisk.
  4. Add oil to the eggs and sugar while whisking, then add the vanilla, bananas and yogurt.
  5. Fold the flour mixture into the banana mixture until well mixed.
  6. Pour that into your greased bread pan and bake for 45 minutes at 350 degrees or until a toothpick comes out clean when inserted in the middle.
  7. Cool on a wire rack and enjoy.

Focaccia Turkey BLTS

This is my favourite sandwich to make and eat of course. I will go through the recipe for the bread first and then the mayo along with the sandwich. You can purchase the bread but I highly recommend making it. It’s best to make the dough the night before so I suggest having pizza with half the dough and placing the other half in the fridge for the sandwiches the next day. I have made the dough the same day and it was still good, just let it rise for an hour but hey I just write the recipe from there it’s yours.

ingredients:

For the dough:

  • – 4 cups of warm water
  • – 1 packet of yeast
  • – 1/2 cup sugar
  • – 1/2 cup olive oil
  • – 1 cup multigrain flour
    – 7 1/2 cups all purpose flour
  • – 1 tbsp salt
  • – 1/4 cup olive oil
  • – 3 cloves garlic, minced
  • – 1/2 tbsp rosemary
  • – 1 1/2 tsp dried thyme
  • – 2 tsp dried basil
  • -1 tsp flaked salt
  • – 1/4 cup Parmesan cheese, grated

directions:

  1. 1. Pour 1/2 cup of the water in the bottom of the bowl of a mixer and sprinkle with the yeast, let it set for 5 minutes until the yeast activates.

2. While the yeast activates get a medium size bowl and whisk together the rest of the water with the sugar, 1/2 cup olive oil and salt.

3. add that to the yeast along with the multigrain flour and 3 cups of all purpose flour. Add the dough hook attachment and mix for 2 minutes.

4. add the remaining flour and mix for another 3 minutes or until the dough comes from the sides of the bowl. It will be a little sticky. Place the dough in a greased bowl covered with a towel and place in the fridge until the next day.

5. remove the dough from the fridge and bring to room temperature, about an hour. Punch it down and split it into four dough balls. Spread them out on a greased baking pan 1/2 inch thick. The pan can be 10 or 12 inches the dough doesn’t need to touch the sides. It’s like a large oval. Let that rise for one hour.

6. while the dough is rising mix together the other 1/4 cup olive oil in a small sauce pot with the garlic, rosemary, basil, thyme and salt. Bring it to a bubble it will be aromatic and then cool it down.

7. when the dough is ready, grease your finger and poke it all over then spoon the olive oil and herbs over it. Sprinkle with Parmesan cheese and bake at 375 degrees for 25 minutes or until golden Brown. Let it cool and cut into as many sandwich squares as you like. I like to save a loaf to have with lasagna or spaghetti.

For The Mayo

ingredients:

  • – 1/2 cup mayo
  • – 1 red bell pepper

directions:

  1. 1. Cut the Pepper in half and clean it out, place it on a greased baking sheet cut side down and drizzle with olive oil. Roast in a 375 degree oven for 20 minutes or until the skin is charred.
  2. 2. Remove the cooked pepper from the oven and place in a bowl covered until cooled.

3. Once cooled enough, peel the pepper and chop it up fine. Mix it with the mayo and viola.

For the Sandwich

The amounts are really personal preference but I use 4 slices of deli Turkey you could use fresh roast Turkey as well or chicken. I also use two strips of cooked bacon, one to two slices of tomato and one big piece of lettuce. Slice the bread like a sandwich, spread the mayo on both sides and top with the Turkey, bacon, lettuce and tomato. You are welcome!

Nanaimo Bars

This is my take on the Nanaimo Bar or Square. I love making these around Christmas time. Try them out for yourself. I hope you enjoy.

Ingredients:

Bottom Layer:
2/3 Cups Butter
1/4 Cup cocoa powder
1/3 cup sugar
1 egg
2 cups graham crumbs
1 cup coconut

Middle:
2 1/2 cups powder sugar
3/4 cup butter
2 tbsp milk
3 tbsp custard powder

Top:
1 pkg semisweet chocolate
3 tbsp butter

Directions:

  1. Melt the butter in a bowl over a pot of water. Add the cocoa powder and sugar, mix well.
  2. Remove bowl from the heat, add the egg, return to the pot and mix until thicken.
  3. Remove from the heat again, add the graham crumbs and coconut. Press the mixture into the bottom of a pan 8×10 and let cool.
  4. While bottom layer is cooling. Mix together the custard powder, powder sugar, butter and milk with a rubber spatula. Spread over the bottom layer.
  5. In a bowl over a pot of boiling water melt the semisweet chocolate and butter. Pour that evenly over the custard layer and refrigerate for a hour. Cut up and serve.

New York Style Cheesecake

This one was a request for my sister’s birthday. If I could make one thing for the rest of my life it would be cheesecake. I would open a store and just sell different flavours of it I love marking them that much.

Ingredients

  • 1 1/2 cups graham crumbs
  • 1/4 cup melted butter
  • 2 tsp sugar
  • 4- 8 ounce packs of cream cheese, room temperature is easier to use
  • 1 1/4 cups granulated sugar
  • 4 large eggs
  • 1 1/2 tsp salt
  • Zest of one lemon
  • Juice of half a lemon 2 tbsp
  • 1/4 cup Greek yogurt or sour cream
  • 2 tbsp flour
  • 2 tsp vanilla

Directions

  1. Set the oven to 350 degrees and grease a springform pan.
  2. Get a medium sized mixing bowl and combine the graham crumbs, melted butter and 2 tsp of sugar. press the mixture into the bottom of the springform pan and bake for 6 minutes.
  3. Turn the oven back to 300 degrees.
  4. While the crust and oven cools. Cream the cheese in a mixer or in a bowl with a hand mixer until smooth.
  5. Add the sugar and mix some more. Making sure to stop and scrape the sides with a rubber spatula so there’s no lumps and mix again.
  6. Mix in the eggs followed by the rest of the ingredients until well incorporated.
  7. Next wrap the bottom of the springform pan with aluminum foil well so water doesn’t get in. Honestly this rarely works fully for me but helps a little.
  8. Pour the filling over the graham crumb base and give it a little jiggle or run a knife through to get out as much of the air bubbles as possible.
  9. Lay the the cake in a large roaster and fill halfway with boiling water.
  10. Bake in the oven at 300 degrees for 1 hour 30 minutes. Then shut the oven off and leave the cake in for about 15-20 minutes.
  11. Then you want to crack the oven and let the cake cool as slowly as possible. For about another hour or so. I use a heat proof utensil to keep the door open.
  12. You can then pop it the fridge and cool completely. Serve it up with whatever toppings you like. My favourite is bake apple jam or some people call them cloudberries.

Fresh Bagel Recipe

Bagels were first made around about the 1600s in Poland and are still enjoyed throughout North America and the world to this day.

Ingredients:

1/2 cup warm water
3 packets of yeast

1/2 cup honey
About 4 litres of water

4 cup of warm water
1/3 cup vegetable oil
2 tbsp of salt
1/3 cup sugar 1 tbsp honey
11cups bread flour or all purpose

Directions:

  1. Pour the 1/2 cup of water in the bottom of a stand mixer bowl or a large regular bowl and let stand for 5 minutes.
  2. In another medium sized bowl whisk together the water, salt, oil, honey and sugar.
  3. Add that mixture to the yeast once proofed and with the dough hook attachment or in the bowl with a wooden spoon start mixing in the dough. With the bowl switch to your had when it becomes difficult to stir then knead a little bit not too much. The dough should be soft and a little sticky.
  4. Put the dough ball in a greased bowl covered with a warm damp towel for about 1.5 hours.
  5. Now pinch off 12 even sized balls and roll them out to about 3/4 of an inch thick. Wet ends and make the bagel shapes. Lay them on a greased pan with the towel for another 15 minutes.
  6. While that’s rising in a big pot bring the 2 litres of water and honey to a boil. When ready cook the bagels in the water for 60 seconds on each side and lay back on the baking sheet.
  7. Once all boiled bake the bagels at 450 degrees for about 15-20 minutes. You can add toppings such as sesame seeds before they go into the oven because they are sticky enough to hold them. Enjoy!

Crispy Double Dipped Onion Rings

These addictive rings are just as fun to make as they are to eat. A great recipe to do with your kids and they can be air fried or deep fried.

ingredients

for the batter you’ll need:

  • 1 1/2 cups of flour
  • 1 tbsp baking powder
  • 1/2 tbsp granulated sugar
  • 1 1/2 tsp salt
  • 3/4 tsp pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp of Cajun spice
  • 2 1/4 cups of milk or a nondairy substitute.

For the Panko you will need:

  • 1 1/2 to 2 cups of Panko and 1/2 tsp salt mixed together in a separate bowl.
  • And another bowl with 1 1/2 cups of flour and of course 2 good size onions.

Directions

  1. Get a cutting board and a good knife, slice the ends off of the onions and peel them whole. Cut them in a cross section whatever thickness you would like for and onion ring I like about 1/4 inch thickness or less. Gently separate the rings into a bowl and cover them with water. Save the junk pieces For other things.
  2. Grab another large bowl and whisk together the flour, baking powder and spices.
  3. Add the milk and whisk until smooth. Set it aside with the rings.
  4. Now set up your station and heat up your fryer. You should have one bowl with the onions sliced, one with flour, another with batter and finally a third with Panko and salt. It’s also handy to have a tray so you can lay the battered onion rings on before they go to the fryer
  5. Take your onion a piece at a time and coat them with flour, shake the excess off and dip them in the batter then let the excess drip off again and finally toss them in the crumbs. Lay them out on a tray until you have enough to fill a basket and fry for about 4-5 minutes in the deep fryer or spray with cooking spray and air fry on high until golden.

Bread Pudding

Get your ice cream and make this super easy Bread And Butter Pudding. This recipe was made so you don’t really have to think about it. Now you can half this if need be. I use a sweet bread if I have it like my Hawaiian sweet bread but you can use whatever you have handy.

Ingredients

  • 1 litre of milk 4 cups
  • 1 loaf of bread
  • 10 eggs
  • 1 cup of sugar
  • 2 tsp vanilla
  • 1 1/2 tsp of cinnamon
  • 1/2 tsp salt
  • 3/4 cup raisins
  • 1/2 cup butter melted

Directions

  1. Set oven to 325 degrees and grease a large baking dish.
  2. Tear up the bread and toss it in the dish. Sprinkle the raisins on top
  3. Get a large bowl and whisk the eggs, sugar, salt and cinnamon together.
  4. pour in the milk and vanilla, whisk well.
  5. Pour the egg mixture over the bread and mix it in well.
  6. Pour the melted butter over the top and let it set for 20 minutes.
  7. Bake a 325 degrees for 45-50 minutes. I find covering it for the last 15 minutes so the raisins don’t burn. Serve it up warm with some vanilla ice cream and caramel sauce if you like.

My Mac and Cheese Recipe

It’s been all about the comfort food here lately because of the pandemic here’s another classic. My Creamy Mac & Cheese Recipe. Sometimes I like to change the milk for heavy cream. Highly recommend. You could also swap the milk for a non dairy substitute and the butter for 3 tbsp vegetable or coconut oil.

Ingredients

  • 4 cups cooked pasta
  • 1/4 cup butter
  • 2 cups of milk
  • 1/2 tsp mustard powder
  • 2-3 tbsp grated Parmesan
  • 1 1/2 cups sharp cheese plus 1 more for topping, grated (you could also do half Gouda)
  • a dash of hot sauce
  • salt and pepper to taste

Directions

  1. Set a oven to 350 degrees grab a large baking dish and toss the strained cooked macaroni in.
  2. In a medium saucepan set to medium heat melt the butter.
  3. Add the milk, both cheeses, mustard powder and hot sauce. Whisk until the sauce starts to thicken and bubble, season with salt and pepper, then remove from the heat.
  4. Pour the sauce over the macaroni and stir it in well. Top it off with 1 cup of shredded cheese or more if you like.
  5. Bake for 25 minutes or until the desired crispness of the cheese. Enjoy, like and share please. Have a great evening.

Easy Beef Stroganoff

Today’s recipe is for a Simple Beef Stroganoff. I used sirloin for the cut of beef but you can use ribeye of tenderloin.

Ingredients

  • 1 lb of beef sirloin, sliced thin
  • 1 onion, sliced thin
  • 2 cups mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tsp mustard powder
  • 1/2 tbsp of lemon juice
  • 1/2 tbsp Worcestershire (optional, I didn’t use it because we have someone on the boat with an allergy)
  • 1/4 cup butter
  • 1 1/2 cup beef stock
  • 1 cup sour cream
  • salt and pepper to taste
  • about 4 cups cooked egg noodles and parsley or chives for garnish if you like.

Directions

  1. Heat a large pan to medium heat and melt the butter.
  2. Add the onions and cook until they start to brown then add the mushrooms stir until cooked and remove from the pan.
  3. In the pan you removed the onions from cook the garlic for a few minutes then add the beef and stir until all the beef is cooked.
  4. Add the stock and lemon, bring to a boil stirring occasionally until the stock is reduced to half.
  5. Once reduced add the sour cream then season to taste with salt and pepper. Serve it up with the egg noodles. Have a great evening.

Cod Fish Cakes

This is a classic where I’m from. Most of the time it’s made exclusively with salt fish but I like to make it with fresh fish and a little of the salt fish. This is a huge recipe that makes about 40 cakes so feel free to half or even quarter this recipe. I’ll be getting out of my head and pushing myself to post more now. Hopefully haha.

Ingredients

  • 10 cups mashed potatoes
  • 1/2 cup butter
  • 12 cups cooked flaked fresh fish
  • 1 large onion, diced
  • 2 cups salt fish soaked overnight and cooked
  • 1 1/2 tbsp salt
  • 2 tsp pepper
  • 2 tbsp savory
  • 3 tsp mustard powder
  • 1 tsp garlic powder
  • 2 tbsp lemon juice
  • 2 cups bread crumbs
  • 4 eggs
  • Flour for the cakes
  • Vegetable oil for frying

Directions

  1. In a large bowl mix mix the mashed potatoes with the butter.
  2. Next add both of the fish, onions, bread crumbs and spices. Stir it all together well.
  3. Taste and adjust the seasoning as next then mix in the 4 eggs.
  4. Let it set up for at least 20 minutes. Grab another bowl and add some flour for the cakes and head up a frying pan and coat the bottom with vegetable oil. Heat it up, sprinkle a little flour to see if it sizzles right away. Then you are ready to fry.
  5. Make your cake by pressing out into the desired sized patties, coat with flour and cook on both sides for about 4-5 minutes on each side. Serve it up with some Ketchup and favourite side. Check out the video on Tiktok.

Making Pizzas

Pizza can be so much fun to make. I find the dough to be quite easy to work with you work it slowly. Spread the dough on the sheet then let it rest for a few minutes and stretch a little more. Repeating until you get the desired size and thickness. I hope you enjoy this recipe.

Ingredients

  • 8 Cups Flour
  • 1 cup multigrain flour
  • one packet of active dry yeast
  • 1 tsp sugar
  • 4 cups warm water
  • 2 1/2 tsp salt
  • 1/2 cup sugar
  • 1/2 cup olive oil

Directions:

  1. Mix together 1 cup of the warm water with 1 tsp sugar and sprinkle with yeast. Let the mixture sit until it starts to ferment (about 5 minutes).
  2. Next whisk together 1 cups water with, salt, sugar, and oil. Add this to the yeast mixture along with 1 cup of flour and whisk until smooth.
  3. Slowly add the rest of the flour while mixing with a wooden spoons or mixer with a dough hook attachment, (Note: When mixing with a wooden spoon stir until the dough starts coming away from the sides of the bowl and a ball starts to form. Switch to your hands and knead the dough while adding the rest of the flour). It’s best to move the dough to a floured surface. The dough is ready when is smooth and elastic.
  4. Let it proof in a greased bowl with a damp towel over it for 45-60 minutes then its ready to use.

Pizza sauce

Ingredients:

  • 2 1/2 cups tomato sauce or crushed tomatoes
  • 1- 12 oz can tomato paste
  • 1 tsp garlic powder
  • 2 tsp dried oregano
  • 1 1/2 tsp dried basil
  • 1 tsp salt
  • 1/4 tsp pepper
  • A dash of hot sauce (optional)

Directions:

  1. Mix everything in a pot and bring it to a bubble and cool. I don’t even bother sometimes. I just use it mixed cold, it’s gonna be cooked on the pizza anyway.

Have fun with this recipe. You can make the pizzas as big or as small as you like. They can be portioned and frozen for later use as well. I make bbq chicken or pork, Donair and many more. Don’t forget the garlic bread.
