Cod Fish Cakes

This is a classic where I’m from. Most of the time it’s made exclusively with salt fish but I like to make it with fresh fish and a little of the salt fish. This is a huge recipe that makes about 40 cakes so feel free to half or even quarter this recipe. I’ll be getting out of my head and pushing myself to post more now. Hopefully haha.

Ingredients

  • 10 cups mashed potatoes
  • 1/2 cup butter
  • 12 cups cooked flaked fresh fish
  • 1 large onion, diced
  • 2 cups salt fish soaked overnight and cooked
  • 1 1/2 tbsp salt
  • 2 tsp pepper
  • 2 tbsp savory
  • 3 tsp mustard powder
  • 1 tsp garlic powder
  • 2 tbsp lemon juice
  • 2 cups bread crumbs
  • 4 eggs
  • Flour for the cakes
  • Vegetable oil for frying

Directions

  1. In a large bowl mix mix the mashed potatoes with the butter.
  2. Next add both of the fish, onions, bread crumbs and spices. Stir it all together well.
  3. Taste and adjust the seasoning as next then mix in the 4 eggs.
  4. Let it set up for at least 20 minutes. Grab another bowl and add some flour for the cakes and head up a frying pan and coat the bottom with vegetable oil. Heat it up, sprinkle a little flour to see if it sizzles right away. Then you are ready to fry.
  5. Make your cake by pressing out into the desired sized patties, coat with flour and cook on both sides for about 4-5 minutes on each side. Serve it up with some Ketchup and favourite side. Check out the video on Tiktok.
