Focaccia Turkey BLTS

This is my favourite sandwich to make and eat of course. I will go through the recipe for the bread first and then the mayo along with the sandwich. You can purchase the bread but I highly recommend making it. It’s best to make the dough the night before so I suggest having pizza with half the dough and placing the other half in the fridge for the sandwiches the next day. I have made the dough the same day and it was still good, just let it rise for an hour but hey I just write the recipe from there it’s yours.

ingredients:

For the dough:

  • – 4 cups of warm water
  • – 1 packet of yeast
  • – 1/2 cup sugar
  • – 1/2 cup olive oil
  • – 1 cup multigrain flour
    – 7 1/2 cups all purpose flour
  • – 1 tbsp salt
  • – 1/4 cup olive oil
  • – 3 cloves garlic, minced
  • – 1/2 tbsp rosemary
  • – 1 1/2 tsp dried thyme
  • – 2 tsp dried basil
  • -1 tsp flaked salt
  • – 1/4 cup Parmesan cheese, grated

directions:

  1. 1. Pour 1/2 cup of the water in the bottom of the bowl of a mixer and sprinkle with the yeast, let it set for 5 minutes until the yeast activates.

2. While the yeast activates get a medium size bowl and whisk together the rest of the water with the sugar, 1/2 cup olive oil and salt.

3. add that to the yeast along with the multigrain flour and 3 cups of all purpose flour. Add the dough hook attachment and mix for 2 minutes.

4. add the remaining flour and mix for another 3 minutes or until the dough comes from the sides of the bowl. It will be a little sticky. Place the dough in a greased bowl covered with a towel and place in the fridge until the next day.

5. remove the dough from the fridge and bring to room temperature, about an hour. Punch it down and split it into four dough balls. Spread them out on a greased baking pan 1/2 inch thick. The pan can be 10 or 12 inches the dough doesn’t need to touch the sides. It’s like a large oval. Let that rise for one hour.

6. while the dough is rising mix together the other 1/4 cup olive oil in a small sauce pot with the garlic, rosemary, basil, thyme and salt. Bring it to a bubble it will be aromatic and then cool it down.

7. when the dough is ready, grease your finger and poke it all over then spoon the olive oil and herbs over it. Sprinkle with Parmesan cheese and bake at 375 degrees for 25 minutes or until golden Brown. Let it cool and cut into as many sandwich squares as you like. I like to save a loaf to have with lasagna or spaghetti.

For The Mayo

ingredients:

  • – 1/2 cup mayo
  • – 1 red bell pepper

directions:

  1. 1. Cut the Pepper in half and clean it out, place it on a greased baking sheet cut side down and drizzle with olive oil. Roast in a 375 degree oven for 20 minutes or until the skin is charred.
  2. 2. Remove the cooked pepper from the oven and place in a bowl covered until cooled.

3. Once cooled enough, peel the pepper and chop it up fine. Mix it with the mayo and viola.

For the Sandwich

The amounts are really personal preference but I use 4 slices of deli Turkey you could use fresh roast Turkey as well or chicken. I also use two strips of cooked bacon, one to two slices of tomato and one big piece of lettuce. Slice the bread like a sandwich, spread the mayo on both sides and top with the Turkey, bacon, lettuce and tomato. You are welcome!
