New York Style Cheesecake

This one was a request for my sister’s birthday. If I could make one thing for the rest of my life it would be cheesecake. I would open a store and just sell different flavours of it I love marking them that much.

Ingredients

  • 1 1/2 cups graham crumbs
  • 1/4 cup melted butter
  • 2 tsp sugar
  • 4- 8 ounce packs of cream cheese, room temperature is easier to use
  • 1 1/4 cups granulated sugar
  • 4 large eggs
  • 1 1/2 tsp salt
  • Zest of one lemon
  • Juice of half a lemon 2 tbsp
  • 1/4 cup Greek yogurt or sour cream
  • 2 tbsp flour
  • 2 tsp vanilla

Directions

  1. Set the oven to 350 degrees and grease a springform pan.
  2. Get a medium sized mixing bowl and combine the graham crumbs, melted butter and 2 tsp of sugar. press the mixture into the bottom of the springform pan and bake for 6 minutes.
  3. Turn the oven back to 300 degrees.
  4. While the crust and oven cools. Cream the cheese in a mixer or in a bowl with a hand mixer until smooth.
  5. Add the sugar and mix some more. Making sure to stop and scrape the sides with a rubber spatula so there’s no lumps and mix again.
  6. Mix in the eggs followed by the rest of the ingredients until well incorporated.
  7. Next wrap the bottom of the springform pan with aluminum foil well so water doesn’t get in. Honestly this rarely works fully for me but helps a little.
  8. Pour the filling over the graham crumb base and give it a little jiggle or run a knife through to get out as much of the air bubbles as possible.
  9. Lay the the cake in a large roaster and fill halfway with boiling water.
  10. Bake in the oven at 300 degrees for 1 hour 30 minutes. Then shut the oven off and leave the cake in for about 15-20 minutes.
  11. Then you want to crack the oven and let the cake cool as slowly as possible. For about another hour or so. I use a heat proof utensil to keep the door open.
  12. You can then pop it the fridge and cool completely. Serve it up with whatever toppings you like. My favourite is bake apple jam or some people call them cloudberries.
