Sunday Thanksgiving

Well almost caught up on the posts. Yesterday was Thanksgiving for us Canadian folks, so obviously I had to make the turkey and jiggs dinner. It is a Sunday tradition for us in Newfoundland and it is quite the production. I will leave a video link below so you can get a general idea of what it takes to make this huge dinner. I do enjoy making it though, it kind of relaxes me in some way. Everyone makes it differently to so if you ever get invited to one of these by chance go for it.

It consists of a roast turkey, potatoes, carrots, turnip, cabbage, peas, corn, dressing, gravy, peas pudding and salt beef. The Turkey is roasted pretty traditionally, typically stuffed with the dressing when we make it at home but because of food regulations stuffing is a no no offshore. If you get the chance stuff it. The salt beef is boiled in a huge pot of water for a couple hours. then you would add the cabbage, turnip and carrots to boil for about an hour with the salt beef. You can also add your split peas to a pillow case or peas pudding bag, tie it off and toss it in. That’s right everything goes in the one pot haha. Allow for a half hour before your veggies are done to add the potatoes because they do not take as long. After all the veggies and turkey are done, strain the drippings from the roaster into a pot and add a couple ladles of the stock from the veggies and salt beef. This will be used to make the gravy. We make the gravy by bringing the pot to a boil and adding some gravy browning along with whisking in a slurry ( a mixture of water and flour). Once it’s all complete serve it up, sit around, be merry and thankful.

Supper was a traditional cold plate with salads, leftover turkey, lettuce and tomato. I also make some pizza subs and fries for a second option. I can give you the recipe for my super easy coleslaw that is restaurant worthy.


1 cabbage, grated

1 large carrot, grated

3/4 cup of salad dressing or mayo

1/2 cup sugar

2 1/2 tablespoons of white vinegar

1/2 tsp salt

1/4 tsp pepper


In a medium mixing bowl toss all ingredients together throughly and serve. Give it an hour to really let those flavours marry.

I might as well end this off with a bonus dessert recipe that goes great with Sunday dinner. Here is my Banana Bread Pudding with a Foster Sauce.


8 slices of bread
1/2 cup melted butter
1/3 cup granulated sugar
1/4 tsp salt
1 tsp cinnamon
2 ripe bananas
2 cups of milk
4 eggs

for the sauce

1/2 cup Butter
1/2 cup brown sugar
1/2 cup maple syrup
1 tsp vanilla extract
1/2 tsp rum extract or you can use actual rum
3/4 cups chopped walnuts


1. Tear up bread and place it in a greased baking dish. then pour melted butter all over.

2. In a medium mixing bowl mash the banana with a masher or fork.

3. Add the eggs, salt, cinnamon, sugar and vanilla. Whisk it all well.

4. Pour in the milk and whisk some more.

5. Pour the mixture all over the buttered bread and let it all soak in you can stir it to speed up the process.

6. Bake in a oven set to 350 degrees for 45 minutes.

7. making the sauce combine all the ingredients in a small sauce pot and stir until it starts to bubble.

8. once the banana bread pudding is out of the oven it may deflate a bit but don’t worry its still great. Serve it up with some vanilla ice-cream and the sauce.

Bullying the Aftermath

Ok… Deep Breath and here we go. I want to share with you something that I know from experience and that is sometimes when you have been bullied frequently as a kid it can leave a lasting impression on you right into adult hood.

These are things that I have only shared with my wife but I think it’s time to let it out and maybe it will help others that are struggling. This will also give you some insight into what I want to dedicate my life as a chef to give it some meaning.

I don’t really know why or when exactly it all started, it’s been years of pushing it away but I didn’t know how to truly deal with it at the time, so I would just escape into my own dream world all the time and pretend I was in a movie. That’s where the desire to become an actor came from. Most of the stuff was pretty standard. Chased with objects mostly rocks, tricked into drinking urine and being chased with porno magazines which is quite messed up for a prepubescent kid. These things sucked yes, there was one point where it became the daily harassment show but nothing sticks more than a name which lasted what felt like an eternity and that name was “pillow puff”I will not go into the details of where it came form but it was bad trust me. I was the kid that didn’t want to inconvenience people so I just kept it to myself which I would like to advise against doing, things would have been so much better if I had just said something.

Now for the long term affects of being bullied and not dealing with it right away. I suck at confritation and my social skills still set me back to this day. I get sick when I’m in small groups and I panic, I’ll also look for every way out of social engagements. I’ve missed so many opportunities because of it. I also have this bad habit of shutting down and not letting people in which is the worst cause I even do it to my wife but luckily she calls me out on it. All things that I’m going to work on because they are getting in the way of me having a full happy life.

I hope that with this cookbook I can set a few things right and give myself some of that time back that was wasted being scared, with your help of course. Hopefully it will also be the foundation to my program where I help others who have been bullied or who just feel like they never fit in to find something to be passionate about like cooking and film has done for me. When I’m cooking or editing video everything just melts away. It’s funny I mentioned before that small groups make me sick but if you put me in front of a huge crowd or a camera I’m right at home, it’s weird but there’s this high you get that can be measured.

What You See Vs. What I See

I’m talking about the cookbook again of course, It’s all I think about. Starting to think it’s a curse. Now that you’re done rolling your eyes let’s get on with it.

What you do you see when you look at my book? Probably that it’s just a ebook or maybe it’s a cash grab? A hair brained get rich scheme, I can tell you right now it’s not that one seeing as it has been over a year now. Maybe you think it’s a little hobby or side project? All these would be valid, you don’t know me so how would you expect anything different. The ebook is not even up on Amazon or Ibooks, right? There is a reason for that and I will get to it but for now hear me out.


Now here’s what I see. This ebook “The Beta Cookbook” is the foundation to my future as well as the future of my family. It is a opportunity to turn things around and give meaning to my life as a chef. I see this book having the potential to create jobs and change lives. Well not the book itself but I will do what I can to change lives. This book was created with the intention of getting funding for a full length interactive cookbook, only I wanted people to have something in the meantime as opposed to just asking for money for nothing. Last Saturday at Work, Last Pea Soup

Well another 12 hour shift done and only 3 full ones to go, I’m really looking forward to getting home to see my wife and the little one. Had to leave for work too soon after he was born but now I get to have a full month with him. It will be also a full month of working on the cookbook and YouTube cooking channel as well. Can’t wait to get some updates done and improve on the video making. I can’t give up on myself, it’s the one thing that always happens and it sets me back. Gotta kick it into high gear and work towards giving my family the best life possible with the skills I have. Tired of moving backwards, it’s time to launch forward. Anyway lets get to the recipe.

Pea Soup is a Saturday tradition on the boats here in Newfoundland. Some people would get confused on what day it is if the soup is not on when it’s supposed to be. The Dumplings are also called “dough B’y’s” if you’re ever in Newfoundland and you see it around. If you don’t have access to salt beef you can substitute with a ham bone. Pea Soup With Dumplings (Dough B’y’s)

1 lb salt beef (soaked overnight)
250g split peas
1/2 a medium turnip
1/2 a large onion
1 medium carrot
3 or 4 ribs of celery
4 L of Water
1 bay leaf (optional)

1. Dice up your beef and trim all the fat and bones off. Toss it in a medium soup pot. Place in your bay leaf if you choose.

2. Add your split peas and pour 4L of water over it. Then lay it on the stove uncovered at high heat to bring to a boil. Stir occasionally so the peas don’t stick.

3. In the meantime dice up all your veggies. after about 1 1/2- 2 hours toss in the diced vegetables and bring to a boil again.You may need to add more water so it doesn’t stick and burn. let it cook for another 40 minutes or so.

Now for your Dumplings:

1 3/4 cups flour
1 tbsp baking powder
3 tbsp butter or margarine
1/2 tsp salt
1/4 tsp pepper
3/4 cups milk


1. Whisk together in a bowl the flour, baking powder, salt and pepper.

2. Add the butter and whisk again until the mixture resembles course crumbs.

3. Next pour in the milk and switch to a rubber spatula to mix it all together and a soft dough forms.

4. Pinch off small chunks of the dough and drop them into the boiling pea soup. Cover the pot and remove it from the heat and let the dumplings cook for 20 minutes.

5. Remove the cooked dumplings and add pepper to taste then serve.

Quesadilla Making and a Little Love

The past couple of days have been good cookbook wise, people are starting to show some love and that is great. Maybe this time I won’t give up on myself, gonna make a conscience effort to keep the momentum going. Motivation yeah!

Today was a day on the water nothing exciting, work as usual on a boat. I made a whole heap of chilli with some fresh rolls. Had some hot dogs with wedge fries and salads to keep it a little simple. Oh I also made Chicken Quesadillas which is what I wanted to share today. There are several different varieties that I will add to the cookbook like my greek style or pulled pork quesadilla but today I’ll just share my standard simple chicken quesadillas.


  • Boneless Chicken Breasts (I go with a small breast per quesadilla roughly) 3/4 cup diced
  • Flour Tortilla Shells (Check out my video on how to make them fresh Here)
  • Grated Cheese (I like a lot personally but you can judge accordingly, that’s why I have pictures for this one)
  • Chilli Powder ( About 1 1/2 tsp for 4 breasts worth of diced chicken)
  • Garlic Powder or fresh minced (about 1/2 tsp for the same amount or 2 cloves minced)
  • Cumin (Just a dash will do if you have it)
  • 1/4 cup salsa (assuming 4 breasts, this would have been easier if I had just said for 4 at the beginning, too late to turn back now)
  • Salt and Pepper to taste.



1. Cook off your chicken breasts in an oven set to 350 degrees for about 25-30 minutes. I seasoned my breasts with a little chilli powder, garlic, salt and pepper.


2. Once the chicken is cooked, let it cool a little then dice it up into cubes like this.


3. Pour on your salsa.


and add those spices, this looks like a lot because I was making about 30 quesadillas.


4. Mix all that together, it will look a little like this.


5. Lay the tortilla out on a cutting board or any clean surface and sprinkle half with cheese like so.


6. Then add the 3/4 cup of diced chicken on top of the cheese.


7. Of course you gotta sprinkle more cheese on top, it helps the quesadilla stick together and come on, it’s cheese!

8. Fold the tortilla in half like so.


8. Lay your Quesadilla in a pan set to medium heat and fry on both sides until browned on one side.

9. Once the cheese has all melted and it get’s this lovely colour above you are ready to chop and serve up with you’re favourite dip like sour cream or guacamole or both.

One Book to Change the Game

All I have to do is come up with the magic words that will get thousands of people taking a chance on me and purchasing this little ebook cookbook. Then I can reshoot and add to it making an even better cookbook and turn that one into a bestseller. After that comes the cooking show and the learning new techniques from some of the great chefs of the world. Don’t forget the line of super awesome cooking gear that I can promote and going back to school for some sort of degree, maybe in marketing? Here come the words in 3..2..1. Nope I don’t have them, all I can do is put myself out there. If only I were more social, maybe there would be a chance. Why can’t I stop thinking about it? Just one shot, that’s all I need. Why did I have to love cooking and filming so damn much. Should of never started that Youtube Channel, it made me want to do more with cooking. I just want my cooking to mean something. Anyway all I can do is hope for a miracle and keep working hard the right people will come along, some already have and I am enterally grateful. Then I will make miracles happen for others.

Would I be deluded  in thinking that maybe one day one thing I do will change my story for the better? It’s one of the few things that keeps me going so I hope not.

my social game hasn’t been strong. One on one is fine, small groups give me some horrible anxiety and causes exhaustion. This is probably the one thing that has held me back over the years because most people don’t really get that. You know what is the weirdest part? If you put me in front of a huge audience or in front of a camera, that’s what I live for. It’s one of those feelings that can be substituted for anything else and that’s why I keep trying to get somewhere with cooking channel, hoping that one day someone or some people may see something there, I truly don’t know what other route to take. Suggestions are welcome.

There needs to be some sense of purpose for my cooking, so I’m hoping to one day set up programs in cooking and the arts to help people who have been bullied or just feel left out in life. I know there are lots of people who don’t feel like they fit in anywhere and I want to do my best to help them. Cooking has been a great therapy for me over the years, I’m just always looking for a way to share that with others.

So basically, I want to take my cooking as far as it can go. Create an opportunity to better take care of my family. They are a huge motivator because I haven’t been able to take care of them like the deseve but I hope to change that. I want to help others never feel left out or bullied. Meet some awesome people along the was and always learn.
