#ChangeMyStory

Would I be deluded  in thinking that maybe one day one thing I do will change my story for the better? It’s one of the few things that keeps me going so I hope not.

my social game hasn’t been strong. One on one is fine, small groups give me some horrible anxiety and causes exhaustion. This is probably the one thing that has held me back over the years because most people don’t really get that. You know what is the weirdest part? If you put me in front of a huge audience or in front of a camera, that’s what I live for. It’s one of those feelings that can be substituted for anything else and that’s why I keep trying to get somewhere with cooking channel, hoping that one day someone or some people may see something there, I truly don’t know what other route to take. Suggestions are welcome.

There needs to be some sense of purpose for my cooking, so I’m hoping to one day set up programs in cooking and the arts to help people who have been bullied or just feel left out in life. I know there are lots of people who don’t feel like they fit in anywhere and I want to do my best to help them. Cooking has been a great therapy for me over the years, I’m just always looking for a way to share that with others.

So basically, I want to take my cooking as far as it can go. Create an opportunity to better take care of my family. They are a huge motivator because I haven’t been able to take care of them like the deseve but I hope to change that. I want to help others never feel left out or bullied. Meet some awesome people along the was and always learn.

Pelase share my story with others, I’d like to know of anyone who struggles to do whatever it is they want to do to change their story. Maybe we can work together to get each other where they need to be. Feel free to leave a comment below.

I’m Literally Just Trying Sell My Digital Cookbook

I was going to get a little deeper with this post, talking about bullying and such but you know what? That stuff is in the past. I’m all about moving forward and trying to convince you all to purchase a copy of “The Beta Cookbook” so I can make the most ultimate awesomest interactive cookbook ever.

You see cooking has sort of been my escape from just about everything negative in the world. When I pick up that knife and start creating meals it takes me to some place of true zen and it doesn’t matter that I’m a horribly socially awkward introvert because the food usually speaks for me. Think of it the same ways as a musician who picks up an instrument and plays.

Now the reason I want to get my book published is so I can do more with food than my current job will allow. I would also like to meet, learn from and become friends with all sorts of like minded food people along the way. Let’s not forget I’m always looking for more ways to provide a better life for my family and there is nothing wrong with that. It’s all about growing as a chef and a person. There are lots of exciting and new things I would like to learn so help give me that chance by purchasing my digital collection of recipes. Click on the link below, you will also receive a digital copy of the final cookbook as well once it is complete. You can also help by sharing this and helping me convince the rest of the world to take a chance on this little old nobody from Newfoundland.

http://payhip.com/b/GSJx

I’m not trying to become a top chef or anything like that, it’s just trying to provide for my family while doing what I love to do and hopefully meet some awesome people that share the same passion along the way. Thank you for your support, you are helping turn my life around and making a dream come true. I will truly pay it forward.

don’t forget to also subscribe to my cooking channel: www.youtube.com/adamdurnford

A Letter From A New Dad

Dear Son,

The months leading up to becoming your father people kept telling me my life is about to change and I brushed this of thinking no, it’s going to be the same life but just with a child in it. I couldn’t have been more wrong but not in the way I thought they meant when they said “change”. The way it was interpreted in my head included all the chaos, diapers and crying, that was going to be the change. It wasn’t that at all in fact.

How do I put this into words, the day that you were born was one of the most amazing days of my life of course it never went the way we expected it, let me rephrase that, it went exactly how we would expect it to go for us but the second I heard that cry  time just stopped and I knew from that moment that Love is not a strong enough word to describe how I feel for you. When you get to hold your child for the first time it’s like nothing else even matters. You are my son and I’m going to do everything I can to protect you and give you the life you deserve, that is all that went through my head.

Leaving to go to work offshore after only two weeks of meeting the little light in my heart just may be the hardest thing I could have ever done. I have felt this anxiety for the last few days and it’s not going to get any easier as the years go by but hopefully you will one day know that I am only doing this because it has to be done and one day I will get to where I want to be with my career as a chef that there will be more time spent with you. That is what I strive for. I still can’t believe that you are our child, a true testament to how much love your Mother an I have for one another.  Greyson, you are my strength that I have needed. I still don’t think there are words that can describe it but I love you.

Always,

Your Dad

28 Days of Recipes

“28 Days if Recipes” This is the official title of what “The Beta Cookbook” will become once it is published. It will be a menu plan for 28 days with all the recipes included. That’s 28 breakfast recipes, 28 Main Dishes, 28 desserts etc. I’m going with the 28 Days because that is what we typically work offshore cooking but I will take that a step further and give you lots of tips and tricks if you run out of certain items which happens from time to time being at sea and all. It’s going to be so much fun, I’m super excited. I was having a hard time coming up with the funds for the book so I created “The Beta Cookbook” as a way to raise money for the creation and publishing of the actual cookbook which is now going to be called “28 Days of Recipes”.

So please grab your copy of “The Beta Cookbook” now for $5 so you can help me turn this dream into a reality.

Another Shot Because I don’t Know When to Quit

So I have been trying to make a cookbook and in order to come up with the funds I decided to write a collection of recipes called “The Beta Cookbook” and sell that for $5 as a digital download through payhip. So far I haven’t been all that successful, moved a few copies at the beginning but nothing much after that. Hopefully with this blog post and help from the fine people of the internet hopefully we can get the ball rolling here. I’m doing it this way because I need the funds for a food photographer and obviously funds to have it published but I don’t want to ask for a hand out so I created the digital book.

beta-cookbook

What’s the incentive for you? Well how about a finished digital copy of the final book and a whole bunch of chances to win some great cooking gear if we can get enough to get this off the ground. The digital download has 75+ recipes with links to videos for extra help. There’s breakfast recipes, main dishes, sweets and more.

Click here to get your copy

I’m using Payhip because transactions are safe and secure through Paypal but if you don’t have Paypal. I have set up a campaign for a cooking show and you can get a copy of my book there using credit card. I’m focusing on the show as well but my main priority will be the book. I have this habit of trying to change my life all at once but I gotta keep reminding myself one step at a time. So please help me get this off the ground get your copy now, it’s only $5 and it will make a huge difference and please share as well. I’m doing this on my own and kind of making it up as I go. I’ve reached out to several people for guidance with no response. Thank you for your support I can’t even begin to describe how much it means to me.

Don’t have Paypal? Click Here

Oh and for those of you that paid $15 in the beginning, you will all get a final physical copy of the book once it is published.

Take Care,

Adam

Homemade Fish & Chips, Will it Change My Life?

There’s a lot going on in my life at the moment, I’m gonna be a Dad, working a new job cooking and trying to get situated finically. So now I’m doing this for my little kid. He’s not even out this world yet and I already want to fight for him haha. I will push through and people will start subscribing to my cooking channel. Oh and watch my videos like the one I’m here to talk about today. Homemade Fish & Chips, the more people that watch the better a shot I will have at this changing my life.

Fish & Chips is a staple in Newfoundland and everyone makes it there own way. My recipe is easy and tastes awesome but if you don’t believe me try it for yourself. Then of course you have to like it and share it because that’s the only way that Fish & Chips will change my life. The thing about this recipe is that I have tweaked it so it stays crispy for a long time because typically on a boat it’s buffet style and no-one wants to come in for food and eat a soggy piece of fried fish. Here goes everything.

\

Ingredients

F87ESXTJ16P0NR5.MEDIUM.jpg

1 1/4 cups flour
1/4 cup baking powder
4-6 fish fillets
1/8 tsp garlic powder
1/2 tsp ground pepper
2 tsp salt
1 cup water
1 cup milk
4-5 large potatoes (russets)
and flour for dredging

Directions

Step 1: Wash & Cut Potatoes

FU3NZ50J16P0NQ3.MEDIUM.jpgF609A5BJ16P0NQA.MEDIUM.jpg

Wash potatoes thoroughly and cut fries on a cutting board or if you’re fortunate enough use a fry cutter and soak them in a big bowl of water so the don’t turn on you. Heat a deep fryer to 180 degrees (350), once heated strain the fries in a colander and pat dry with some paper towel. Don’t put wet fries in deep fryer cause that equals danger.

Step 2: Blanch Fries

F4CS4F2J16P0NQH.MEDIUM.jpgFPPFOCAJ16P0NQV.MEDIUM.jpg

Cook the fries for about 7 minutes. You can test them to see if they’re done by pinching, if they pinch rather easy you are good to go. Lay them in a bowl lined with paper towel and set aside. This Process is called blanching, you finish cooking them once the fish is done.

Step 3: Whisk Dry Ingredients

In a medium mixing bowl whisk together the flour, baking powder, salt, garlic and pepper.

Step 4: Pour in Liquids

F6XBK02J16P0NRA.MEDIUM.jpgFBSAXUQJ16P0NRH.MEDIUM.jpg

Pour the water and milk into the bowl then whisk until a thin batter is formed. You can test this by dipping your finger in, if it sticks as a thin layer you’re good.

Step 5: Fry the Fish

FCXJB10J16P0NRP.MEDIUM.jpgFS0700SJ16P0NRX.SMALL.jpgFM2WPKPJ16P0NRW.SMALL.jpg

Take out the basket of the deep fryer and lay it in a pan along side. Dip the fish fillets in the flour then in the batter and let the excess batter drain off. Lay it gently in the deep fryer that is already heated to 180 degrees.

Step 7: Cook on Both Sides

Let the fish brown on one side. Takes about 3-4 minutes, then flip to over and brown on the other side for the same amount of time. repeat the process with one piece at a time. lay the cooked fish on its end in the basket you took out so any access grease can come out.

Step 7: Finish the Fries and Enjoy

FDOC68TJ16P0NSJ.MEDIUM.jpgFEST1VBJ16P0QKB.MEDIUM.jpg

Now finish off the fries by cooking them for another 5 minutes or until crispy and golden. We serve it up with some dressing and gravy here which I will show you how to make in the near future so please subscribe so you don’t miss out.

So will this recipe change my life? Maybe but if I never made it I would never have known. I have had quite a few failures and that’s ok you just have to keep trying especially if you are passionate about it. Don’t get me wrong, I get bummed when there’s a video I’m excited to post only to see that no-one is interested but I will get over it and move on while still promoting the videos with lesser views. I just love everything about doing this. I love seeing people enjoying my recipes, the shooting of the videos and the editing as well. You gotta find your happy place and focus hard on it and one day who knows maybe one of these recipes will change my life.

Click on the link to get a copy of my digital cookbook it’s $5 and will help me to make my cooking show a reality. It has links to videos and help when you need it.

Pushing Forward

So the latest video for my cooking channel on YouTube is not performing well with views, only 14 after 2 days and the loss of 2 subscribers, this may not seem like much but when you only have them in the 130’s it stings a little. One thing is for sure that will not make me give up just yet and niether should you.

No matter what is you want to do in life even if it seems completely ridiculous to the people around you, never back down. I for instance want to be a cooking show host, actor and cookbook author and I will get there even if it seems crazy to me some days . It takes a lot of work and things will not always run smoothly but preservence is key. Yes sometimes you will get frustrated but guess what? You make the rules as you go. Pick yourself up and move forward one slow step at a time.

I remember when I first started this cooking channel it was called “So you think you can’t cook” and the first video was for my Banana Bread Recipe. It was shot on my phone, compared to now it’s kinda funny looking back but I keep it there as a reminder of how far the channel has progressed, it keeps me motivated to do more.

here is the link so you can see:

The next video was a Baked Chicken Alfredo which was also shot on my phone and it’s still one of my most popular recipes to date.

Afterwards I moved on to a digital camera, the video quality was still bad but at least it could hook up to a tripod. These videos still get some residual views, nothing spectacular. Later I scraped together the money and used a credit card to purchase a actual video camera, a Sony Handycam and the quality of videos was much better. Such a happy day for me.  Overtime with lots of practice the editing got easier and I had fun adding music and all that.

Here is a video from a couple weeks ago, this is my Making Cheeseburger Egg Rolls:

Cheeseburger Egg Rolls

The name of the channel has also changed to “Bring Home the Flavour” and has a fancy new logo.

It’s been a long road so far but it’s not over yet and like I said before just because the latest video didn’t perform well doesn’t mean it’s over. Keep pushing forward.

Here goes everything,

Adam
